Restaurants have a need for both raw ingredients and processed products. Currently, these buyers either buy their ingredients raw from the market and process themselves or buy from a network of local suppliers. When they buy produce through the government regulated Agriculture Produce Market Committee (APMC) or directly from farmers, quality of these goods is often inconsistent and may not meet restaurant standards, especially during the monsoon season when according to one executive chef, “up to 20% of the ingredients we purchase during the rainy season are in bad condition.” There are also certain times of the year when particular agricultural products are not available through the APMC. When restaurants buy from local suppliers, they are often unable to get consistent quality processed goods and often cannot get the quantity that they desire.
